Soup and stuff
Jo, with the advent of my kidney problems I can’t leave the skins on potatos and they have to be boiled in a lot of water to reduce potassium. This soup I made yesterday is a departure from my strict renal diet. (Don’t tell my nephrologist.) The cream of chicken soup and the bacon are no nos too but I just had to have some cream of potatoe soup.
Today I have a sore throat and a cold and can barely taste my wonderful soup. Sniff, sniff!
Cucumber soup is also wonderful. I’ve been making it now fow quite a few years. I just take a couple or three good sized cukes, washem’ and leave a lot of the skin on to enhance the beautiful green soup. Cut them up and throw ‘em in the blender with a can of cream of chicken or cream of celery soup, eight ounces of sour cream and a little dill weed and whip ‘em up. Chill and serve…yum. Don’t worry about the leftovers, there won’t be any.
